Amazing Food Storage Meal

When it is close to pay day and I am looking in the pantry and freezer to see what I can make to avoid the commissary for a few days I seem to come up with some of my best meals. Tonight was no exception. Today is pay day for many and tomorrow for the rest of the military. There is also an air show tomorrow and 4 day weekends for several units. So the commissary is a combat zone. I will avoid it for at least 3 days.  While planning the unplanned dinner, I saw the last jar of Ragu Alfredo Sauce and a bag of potatoes. I also knew I needed to cook some bacon that was opened a few days ago.  So tonights dinner, Carbonara-ish potato bake.  Let me say, there is not a single bite of left overs!  I rubbed some baking potatoes with olive oil then seasoned the skin with Natures Seasoning, its a less salty season salt.  I rolled in foil and baked them in the crock pot. They are like a roasted baked potato dream. They stay moist and soft and get a deep roasted flavor.  I then took 2 chicken breasts and cut them into small bite size pieces and sautéed in olive oil adding half a package of turkey bacon once the chicken was cooked. I sliced the bacon into thin strips and stirred into the chicken and olive oil. Once the bacon was heated I added a partial bag of frozen broccoli to make the mix about one third each of chicken, bacon and broccoli then I poured the sauce over it all and turned the heat down to cook the broccoli until soft.  This made 5 servings of what I am calling Chicken Bacon Broccoli Alfredo Potatoes... because I do not have a clue on what else to call it. Any how as my husband was eating his potato I decided I should take a photo and blog the recipe because it got rave reviews from the whole family.  So there is a photos of his partially eaten potato.  LOL

We do taco potatoes, stroganoff potatoes and ham with cheese potatoes... what potato toppings to you like the best?  Living in Idaho for a few years taught me all sorts of great potato dinner ideas.
