Bran Muffins... they look divine!

I am going to go looking for some bran mix because I can not find a recipe I like from scratch and these look so good.


Test Kitch - Leftover Bran Muffins



Hooray! The weather here is absolutely beautiful!!!! We've been out on the deck having BBQ's all week! Last night I threw together a fruit salad to accompany our gourmet (NOT) hotdogs. What do you do with leftover, soggy salad? Throw it into Bran Muffins!

I often use bran muffin mix from Quaker - it's just so much faster! Our fruit salad had strawberries, blackberries, apples and grapes. I had the grapes for breakfast before mincing the rest of the fruit.
I took out about 1/4c of the liquid from the bran mix directions
and added about 1/2c of fruit.
I poured heaping spoonfuls of batter into my non-stick muffin pan. Into the oven they went for 20mins at 400 degrees celcius.
Be sure to test your muffins with a toothpick for doneness. The toothpick should come out cleanly.
