Left Over Turkey?

I got a great deal on whole turkey and I have been getting creative with it.  I got the meat department to cut them in half for me so I ended up with 4 half turkeys for about $12.00.  Each half has turned into about 3 meals. On sundays I have just roasted them and served with potatoes and carrots or stuffing and green beans. But the left overs have been a challenge to create new meals.  So here are some left over turkey ideas that would work with chicken to.

Creamy Mushroom Turkey over Rice
Take chunks of leftover meat and saute with about half a chopped onion and two cloves of minced garlic. Add a milk or cream just past the meat, can of drained mushrooms and rounded tsp of rubbed sage. Salt and pepper to taste and let it simmer. Sprinkle flour over the top and stir in to thicken the sauce. Cook for about 5 more minutes and serve over steamed rice. 

Turkey Tacos 
Left over turkey in the crock pot with onions, bell peppers and taco seasoning. 

Turkey Chili
Just use turkey in your favorite chili recipe. My kids like chili mac. I mix chili macaroni noodles and cheese sauce. 

Turkey Salad Sandwiches
Chunks of turkey mixed with mayo. Use a mix of raisins, cranberries, walnuts, grapes, apples or even mandarine oranges to make a great sandwich filling. Try it in a pita pocket and mix shredded cheese right into the chicken salad.
