A Year of Bread, Day 1

I am a big fan of bread. I have tried to go gluten free and to eat breads made with alternatives to wheat flour. I spent last year experimenting with gluten free breads. It was a year of bread failure and a year that did not make a difference in my health or appearance. So much for Wheat Belly...   Anyhow I did realize this last year that I love baking bread. I wanted to learn the feel of it, to know how the ingredients worked and how to manipulate dough to get a desired effect such as sour dough or crusty french bread. So I finally broke down and purchased "The Bread Baker's Apprentice". (See the link to this book below) This is not a recipe book. The book does have about 50 bread recipes but the first section of the book is dedicated to teaching the reader about bread. This is exactly what I wanted. So I will be posting my progress my failures and my victories as I work my way through a year of bread.
