Yesterday was not only a day of baking bread. I managed to make an awesome batch of blender salsa which was used for pork tacos. I have found that the pork for scaloppini makes a great pork taco. The salsa was just a can of diced tomatoes with dry chilies, garlic and onion blended into it. I used a variety of chilies that I have stored in mason jars. I also added a dash of smoked paprika to it. That gave me a smokey flavor that made this salsa fantastic. My daughter made the corn street vendor style. She microwave cooked the corn wrapped in a tea towel for 5 minutes then topped it with a thin layer of mayo and butter with a sprinkle of parmesan cheese and ground red pepper. Dinner was awesome!
